Try making you own green pesto, it is super easy and so yummy. When I went to see Julia in York last weekend she had all the ingredients and showed me how. You can make it as cheesy, garlicky as you want and even add in some extras to your liking.
What you will need (makes enough to coat about 4 peoples pasta):
A bag of basil
Garlic Gloves (however many you want, we used two)
Parmesan Cheese (again amount up to you)
Chilli Flakes (optional)
The first part of the recipe is to brown of the pine nuts, Julia coated a pan with some olive oil and chucked them in until they went a slightly golden brown colour like below. This only takes a few minutes.
She then poured them into a mixing bowl and added the basil, garlic, olive oil, chilli flakes and quite a lot of cheese (we love a bit of cheese, so we made it very cheesy).
Then all you need to do is blend it all together to a consistency you are happy with. We went for a chunky pesto.
It is that simple, so I highly suggest making your own. You can add all kind of things to it, I have a BBQ next weekend (fingers crossed the weather stays nice) so will be making mine minus the chilli flakes but with some lemon juice. Green pesto is perfect for pasta, chicken and fish without forgetting a nice glass of white wine so an ideal sauce to create. Hope you all have a lovely weekend.
